Now that summer is over and you are headed back to school, it is time to get back on track with eating right! When you are juggling classes, homework, and your social life, it is easy to neglect your meals. However, we are here to make sure that you do not spend the whole year living off cup ramen with our easy, back to school meal prep ideas!
One of the best ways to ensure you’re eating right is to plan your entire week out. We’ve got some amazing marinades for you to try so that you can enjoy different flavours each week. These marinades are very versatile and can be used with chicken as well as vegetables if you do not eat meat. For consistency, we will talk about chicken in our recipes but you can always substitute it with a protein of your choice, or veggies. All you need is freezer bags, chicken breasts, and the following ingredients (depending on the marinade you want). You can prepare these marinades on a Sunday, and spend the rest of the week pigging out.
Monday’s Smoky BBQ
Mix together ketchup, Dijon mustard, smoked paprika, brown sugar, minced garlic, Worcestershire sauce, apple cider vinegar (for a bit of tang), and soy sauce. Mix it together to form a delicious smoky BBQ sauce and put it into your zip lock bag along with a chicken breast. When you’re ready to eat it, grill it on a hot pan for that amazing BBQ flavour! You can also save a bit of the sauce to use as a dipping later!
Tuesday’s Tequila Lime
Add cumin, Mexican oregano, chilli powder, salt, minced garlic, lime juice, tequila (this is optional – you can make this recipe without the tequila too) and olive oil in a bowl and mix together. Put your chicken breast and sauce in a freezer bag and let it rest. You can then pan fry the chicken and eat as is, or use it on a fresh salad with arugula!
Wednesday’s Hawaiian Teriyaki
Add ginger, brown sugar, cinnamon, minced garlic, black pepper, a dash of pineapple juice, honey and soy sauce to create your marinade. Pour it in your freezer bag and add the chicken breast. You can eat this chicken with brown rice for a delicious yet healthy meal!
Thursdays Lemon Herb
Mix together minced garlic, chopped rosemary, chopped parsley, salt, lemon juice and olive oil for the marinade sauce. Add it to your freezer bag with your chicken and you’re done. You can bake the chicken while cooking it, or pan fry it. This recipe goes really well with aglio olio pasta!
Friday’s Creamy Coconut Curry
This one’s ideal for showing off your culinary skills and being the talk of the dorm! Add curry power, ground coriander, ground cumin, salt, minced garlic, chopped cilantro (this is optional if you think cilantro tastes like soap), chopped green onions, lime juice and coconut milk. Pour it into your freezer bag along with your chicken breast and store it in the fridge!
